As I was writing up this week’s meals I decided I wanted to make a few things we don’t usually have. Mike’s Mom is visiting and she makes the best chicken cutlets. So I bought some gluten-free bread crumbs and am excited to have these! It’s also gorgeous here weather-wise so a yummy summer salad is on the list. We plan to eat out a few more times than usual too, since we have visitor!
Monday:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Out
Snack: Raw almonds and organic strawberries
Dinner: Gluten-free chicken cutlets with homemade french fries and steamed broccoli
Tuesday:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Leftover chicken cutlets
Snack: Oatmeal chocolate peanut butter balls (these are SO good)
Dinner: Out
Wednesday:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado or this healthy shake!
Lunch: Chopped kale and spinach salad with avocado, cucumber, radish, almonds, strawberries and grilled chicken (avocado oil and lemon for dressing)
Snack: Apple with almond butter
Dinner: Grilled steak or fish, grilled potatoes and asparagus with pesto
Thursday:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Out
Snack: Protein shake
Dinner: Shredded beef tacos with salad leftovers from Weds
Friday:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado with sausage
Lunch: Shredded beef over quinoa with chopped spinach, avocado and radish
Dinner: Friday pizza night! (gluten-free for me)
