Happy Monday! We are back from my baby shower in New York (which was so fun and special) and getting ready as we can for this little one to arrive in 10 weeks. I will say I did NOT eat the best while away for the weekend due to lots of gluten-free italian options in NY, so I’m looking forward to getting back to eating well and fueling my body (and baby’s!).
Here’s what we’re eating this week:
MONDAY:
Breakfast: 2 Vital Farm’s eggs, steamed broccoli, 1/2 avocado, 2 chicken sausages
Lunch: Chicken cooked in Primal Kitchen’s No Soy Terriyaki sauce with rice and broccoli
Snack: Gluten-free crackers with dairy-free cream cheese
Dinner: Baked salmon with roasted broccoli and potatoes
TUESDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Leftovers from Monday night
Snack: Guacamole with sliced cucumber and baby carrots
Dinner: Grilled chicken mixed in a bowl with rice, kale, avocado, tomato, radish and cilantro
WEDNESDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado or this healthy shake!
Lunch: Salad from Whole Foods
Snack: Sliced apple with a drizzle of almond butter + cinnamon
Dinner: Lamb chops (cooked on the cast iron skillet) with roasted shaved brussels sprouts and cauli rice with grass-fed butter
THURSDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Slow cooker whole chicken with asparagus, avocado and tomato salad
Snack: Peanut butter oatmeal balls – have you made these yet?!
Dinner: Out, it’s date night!
FRIDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado with sausage
Lunch: Leftover chicken breast over a salad
Dinner: Friday pizza night (gluten-free for me)!
