Happy Monday! Here’s what we plan to eat this week 🙂
Breakfast: 2 Vital Farm’s eggs, steamed broccoli, slice of gluten free toast with avocado
Lunch: Big salad (romaine, kale, avocado, cucumber, radish, broccoli, toasted walnuts) with grilled chicken
Snack: Strawberries + a handful of cashews
Dinner: Grilled flank steak with this marinade, grilled potato + broccoli
TUESDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado.
Lunch: Burgers on lettuce wraps with avocado, side of steamed broccoli with avocado oil + lemon
Snack: Apple + almond butter with sprinkle of cinnamon
Dinner: Baked bone in split chicken breast with asparagus

WEDNESDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado or this healthy shake!
Lunch: Leftover chicken breast over quinoa with romaine, guacamole and plain almond yogurt (in place of sour cream)
Snack: Cucumber and carrots with guacamole
Dinner: Shrimp sautéed with spinach and lemon over quinoa
THURSDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Leftovers from dinner or chicken sausage with sautéed kale
Snack: Jillz gluten-free crackers with dairy free cream cheese
Dinner: BBQ chicken breast with grilled eggplant, asparagus and onion
FRIDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado with sausage
Lunch: BBQ leftovers!
Dinner: Friday pizza night (gluten-free for me)!
