This new weekly meal plan series is proving helpful already, I sat down to write it and realized I hadn’t taken meat out of the freezer to defrost yet, so thanks for the reminder! We had our meat delivered from Butcherbox on Friday (it’s organic and grass-fed beef and chicken that comes once/ month) so I take it out of the freezer as needed. So convenient! Alright, here’s our weekly meal plan:
Monday:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Grilled chicken with sautéed onions, steamed broccoli, 1/2 avocado over quinoa with hot sauce
Snack: Apple with almond butter and cinnamon
Dinner: Grass-fed strip steaks with asparagus
Tuesday:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Leftover steak over salad
Snack: Jillz crackers with dairy-free cream cheese
Dinner: BBQ chicken thighs, roasted cauliflower, Alexia waffle fries
Wednesday:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado or this healthy shake!
Lunch: Whole Foods or Verde salad
Snack: Handful of nuts with organic strawberries
Dinner: Baked salmon (recipe coming soon!) with sautéed lemon kale
Thursday:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Wed night dinner leftovers
Snack: Protein shake
Dinner: Gluten-free meatballs (recipe from Simply Real Health cookbook) with Rao’s marinara sauce and sautéed garlic spinach
Friday:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado with sausage
Lunch: Leftovers from Thursday’s dinner
Dinner: Friday pizza night! (gluten-free for me)
I also have Simple Mill’s gluten-free chocolate chip cookies that I’ll snack on if I want dessert. I add chopped walnuts to the mix and they are SO stinkin’ good!
