If you didn’t already know this, I’m not a big fan of cooking. Majority of the time dinner in our house consists of grilling protein and vegetables. While that doesn’t sound all too exciting I do feel like our meals end up being something you’d get at a steakhouse (maybe not as fancy looking) but they are healthy and pretty delicious. Plus, it doesn’t take much time or effort to make these dinners which is right up my alley!
Flank steak with grilled asparagus and potatoes
I don’t really measure when I cook but here’s what I use for the steak marinade: Coconut aminos (1/3 cup-ish), olive oil (1/4 cup-ish), a bit of honey (maybe 1tsp), sprinkle of cayenne pepper, black pepper, salt, 2 cloves minced garlic and tarragon (1/4tsp). Mix together and marinade a grass-fed flank (1-1.5lbs). I usually let it sit in the marinade for at least 10 hours, sometimes I’ll make it the day before to get it extra flavorful!
Cook the steak to your desired temp along with asparagus and red bliss potatoes tossed in olive oil, salt and pepper.
Burgers with avocado, sautéed onion and charred broccoli
We get grass-fed burgers from Butcherbox (where we get most of our meat from). Toss broccoli in olive oil, salt and pepper and grill the burgers and broccoli. Sauté the onions on a stovetop with some ghee, olive oil or coconut oil and a bit of salt. I like to slice the avocado and put it on top of the burgers and then top with the onions, broccoli on the side!
Grilled chicken with a salad (and maybe fries!)
I keep saying I’m going to start marinading chicken but we just end up doing it this super easy way and it turns out yummy, so I haven’t changed it up yet. Coat organic chicken breasts in olive oil and sprinkle salt, pepper, garlic and oregano on them. Grill and slice the chicken then put it on top of a yummy salad. We usually go with: chopped romaine and arugula, cucumbers, chopped radish, toasted walnuts (I throw them in the toaster oven for 10 min), and avocado. We focus more on having protein, fiber, fat and greens with our meals and less on carbs but if we want I’ll make these french fries to have alongside. Other good sides are these fingerling potatoes or some quinoa!
Don’t forget to make extra so you can have leftovers for lunch the following day. Easy peasy 🙂
