We’re back from another weekend trip in NY and I sat down right away to write up the meal plan for this week so I could go food shopping, our fridge was basically empty!
We have a ton of chicken and other meat in the freezer from Butcherbox so I really just needed to add veggies, healthy fats and some carbs into the mix and our weekly meals list was done!

What we’re eating this week:
MONDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach, 1/2 avocado and hot sauce
Lunch: Lentil soup with spinach from Whole Foods
Snack: Gluten free crackers with dairy free cream cheese (Green Valley is a yummy brand)
Dinner: Rotisserie chicken with Alexia waffle fries and roasted broccoli and cauliflower
TUESDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Leftovers from Mon night, without the fries because we ate all of them 🙂
Snack: Gluten free crackers, greek olives and sliced organic apple
Dinner: Fajitas: Diced up chicken with taco seasoning, sautéed peppers + onions, salsa + plain almond milk yogurt (instead of sour cream) on Siete Foods tortillas. Small side salad with romaine, tomato, avocado and cucumber.
WEDNESDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado or this healthy shake!
Lunch: Grilled chicken over romaine with cucumber, avocado, tomato, chopped peppers and bacon
Snack: Organic strawberries + handful mixed nuts
Dinner: Grilled filet mignon (yay Butcherbox!) with these delish potatoes, sautéed kale and chimichurri sauce.
THURSDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Leftovers from Weds night
Snack: Peanut butter chocolate chip oatmeal balls – Mike gets soo happy when I make these!
Dinner: Baked salmon (marinated in coconut aminos, chopped garlic, salt + pepper), simple side salad (same as Tues night) and leftover french fries
FRIDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado with sausage
Lunch: Niman Ranch sweet italian sausage with whatever veggies are left in the fridge + avocado
Dinner: Friday pizza night (gluten-free for me)!
