Ok y’all we’ve got Monday-Thursday this week because we are heading to NY on Friday for a wedding! We got our Butcherbox shipment in toward the end of last week so our freezer is now packed with chicken and steaks, yay! This always makes meal planning so much easier. Here she is, this week’s meal plan:

MONDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Chicken sausage with roasted broccoli and cauliflower
Snack: Bowl of One Degree’s gluten free sprouted brown rice cacao chocolate crisps with almond milk
Dinner: Grilled chicken breast with leftover cauliflower and Alexia waffle fries
TUESDAY:
Breakfast: Omelette with broccoli, side chicken sausage and avocado
Lunch: Sautéed kale with leftover grilled chicken and avocado
Snack: Berries with coconut cream (I whip it up in the blender real quick to thicken it)
Dinner: Grilled salmon with asparagus and onion (also grilled)
WEDNESDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado or this healthy shake!
Lunch: Gluten free chicken nuggets over arugula, cucumber, tomato, broccoli, avocado salad
Snack: 1/2 grapefruit
Dinner: Out- probably burgers!
THURSDAY:
Breakfast: 2 Vital Farm’s eggs, sautéed spinach or kale or steamed broccoli, 1/2 avocado
Lunch: Out (probably burgers!)
Snack: 1/2 grapefruit and handful almonds
Dinner: Grilled chicken thighs marinated in BBQ sauce, filet mignon and grilled zucchini, asparagus and onion
FRIDAY:
Out of town!
