We all know it, veggies are good for us. However, if you ask around, most of us aren’t eating as many as we should (myself included). It’s easy to have a salad with lunch and to cook up some broccoli or brussels sprouts with dinner, but I knew I needed to get an earlier start on my greens each morning. So I experimented with some protein shakes to see what kind of tasty treat I could come up with and this blueberry kale smoothie is my favorite right now.
Sometimes I will have it with eggs for breakfast, as a snack between breakfast and lunch, or even as an afternoon snack. You can’t go wrong with all of the goodness that’s packed in here.
Here is the recipe, I apologize for the non-exact measurements, I rarely measure when I cook, but the good thing about a smoothie is that you don’t need anything to be exact.
What you need:
- A bunch of kale (I use organic and cut it up a bit before blending. A few handfuls will do)
- A handful (or 2) of organic blueberries
- 1 scoop protein powder (I love chocolate but have also used vanilla)
- 1 tbsp. cocoa powder or Metabolic Effect’s Craving Cocoa
- A dash of cinnamon (optional)
- Almond milk (I usually use 1 cup but it depends how you like your smoothie, for a thicker consistency use less liquid)
- Ice (Again, depending on consistency, the amount differs. If you want this as more of a frozen treat, use more ice!)
What to do:
- Place ingredients into blender and blend until desired thickness
- Enjoy!
The great thing about making a shake like this, aside from getting in veggies while hardly knowing it (seriously, you really cannot taste the kale) is that you can try all sorts of variations. If I don’t have kale in the house I’ll use spinach or watercress. And if I run out of almond milk I’ll use water or coconut milk.
