I love going to Whole Foods. I tend to roam around the store for much longer than necessary, looking at new foods to buy or getting recipe ideas. But, I don’t love to cook. So I’ll often find myself at the prepared foods section hoping for something easy to make. Being a big fan of meals consisting of protein and vegetables, it is easy for me to grill up some protein and have either a veggie or salad on the side.
That was my intention the other day, get in and out of the store quickly with only the items on my list. But I just HAD to take one quick peek at the prepared foods section to see if there was anything good. I actually don’t buy from there often, I’m a bit of a brat and if something looks like it isn’t really fresh I won’t get it. But I saw this salad consisting of cucumbers and mangos that looked delish. Instead of getting it already made I decided to quickly grab a few extra items and create my own version.
What you need:
- 1 cucumber (I bought organic and left the skin on)
- 1 mango
- Chopped cilantro (About 2 tablespoons)
- Olive oil
- A sprinkle of salt
- Lemon juice from half of a lemon
What to do:
- Slice cucumber and mango into small pieces and place in a bowl
- Add chopped cilantro
- Drizzle olive oil and squeeze lemon juice over top, add dash of salt
- Toss gently
- Eat!
*Makes 3-4 servings
When I first made this it was meant to be a side dish with grilled chicken. I realized as I was eating that it’d also make for a yummy salsa if chopped into smaller pieces, so that’ll be for next time. I also used the leftovers to mix with spinach leaves which made for a more substantial salad. That’s it- a super easy salad to match with any protein. Enjoy!
